New owners haul them away in huge trucks that carry as much as ten tons. As some of these trucks weigh six tons, you can imagine what wear and tear there is on the pavements. West Street is paved with the stones--4 to 5 inches wide by 6 to 8 inches in breadth by 12 to 14 inches in depth. They are sunk into the ground until only the top is uncovered. This makes an uneven pavement hard to walk over but durable. New York City does business on a big scale, and one of the important things done is this handling of a food supply for about 6 million people. More than 8,000 men are engaged in the work of handling alone. Tomatoes, peaches, green peas, beans, etc., will not keep fresh very long, so they must be disposed of at once. Each day the docks are cleared before the supply for a new day comes in. There is a fruit exchange where fruit from all over the world is sold. Lemons, oranges, pears, grapes, prunes, pineapples, peaches--every kind of fruit grown, comes in great quantities and is sold at auction. On one of the piers there is an old fashioned auction market with an auctioneer and his hammer, where fruit is sold in quantities ranging from a few boxes to thousands of boxes to the highest bidder. Sometimes bidding is keen and half dozen men will be trying to outbid each other and capture a prize lot. To the uninitiated, the scene is one of confusion, but the buyers seem to understand and they are seen after the auction is over hauling away their purchases. When I went through these markets I found grape fruits from Florida and the West Indies; oranges from California; lemons from California and Florida; melons from Arizona and Wyoming; apples and prunes from Oregon; fresh red raspberries from Washington state; pears from Oregon and California; peaches from Georgia; and grapes from California. Every part of our nation seems to contribute as well as many foreign nations. The New York markets are interesting at any time of the year. In January or February a number of the large uptown fruit stores displayed beautiful, luscious looking, red plums and peaches. I couldn't imagine where they had come form, and finally curiosity got the better of me, and I went in to ask the shop keeper about them. Wrappers on the fruit told that they had come from South Africa. One day in the vegetable market we found sacks of onions from Egypt. Across from the farmers' market are the dealers in all kinds of live poultry: chickens, ducks, geese, turkeys, guinea hens and quails. The New York Central tracks come in here from the West and on their sidings are refrigerating cars.
