In the first part, the main striking features about the structure and evolution of the European fish trade over the last decade are presented. The analysis of fish imports and exports provides comprehensive data to characterize the EU fish demand per commodity categories, per species groups, per country, and to estimate price trends for both wild and farmed fish imports. Then, the second part is dedicated to an in-depth analysis of the fresh fish trade, as main outlet for farmed fish. The evolution of the balance trade for the main species groups showing a deficit (salmon, gadoids, other demersal fish, completed by an analysis of the price segmentation of fish imports, highlight the substitution phenomena between farmed and wild fish which occurred over the last decade, while providing an assessment of the fish demand for the different market segments. These results are utilized to analyse the potential outlets on European markets for new farmed species issued from an aquaculture diversification, taking into account the increasing competition from well-established and concentrated fish farming industries (salmon, seabass and seabream), as well as the more recent introduction of low-priced freshwater tropical fish (ex. pangasius). A particular attention is paid to the red drum (Sciaenops ocellatus), a tropical marine fish farmed in the French overseas territories. Future prospects for farmed fish diversification are also discussed as regards the consumer expectations towards image and quality attributes (including environmental). After that the food market has changed radically. At the same time the eating away from home has become increasingly common. The aim of this paper is to describe the development of fish consumption in the Finnish catering service sector. The focus is to evaluate the period during rapid market changes. The estimation of fish consumption was based on a statistical sample and the data was collected in 1988, 1991, 1994 and 2005. It was found that the fish consumption has increased 30 per cent during the last ten years. The growth is exclusively based on imported fish. All types of imported fish products were used for meals more than earlier, but the consumption of fresh fish products has grown most extensively. The consumption of salmon and salmon trout increased most, while domestic caught Baltic herring is considerably less important than earlier. The frequency of serving fish meals has also increased. The abolition of national trade restrictions on fresh fish has inevitably had an impact on the consumption of fish in the catering sector. Local fishing communities’ economic profits in these fisheries have declined and resulted in lower earned incomes for the fishermen. These phenomena have lead many scholars, government agencies and fishing communities to evaluate the optimal number of operating vessels in these fisheries. This study has explicitly applied the concepts of community-based co-management, fish market concentration and labor stickiness to an economic model that can be used to determine the optimum number of fishing vessels in a fishing community. One corollary of this approach is that we modify the traditional assumption regarding labor mobility in a fishing community and explore here how labor stickiness to the extent that it exists in Taiwan’s fishing communities might bias traditional fishing management policies and influence the determination of optimal number of vessels. In addition, the Herfindahl index (H), which measures the degree of concentration in the structure of a fishery market, will also affect the final determination of the optimal number of vessels. Results suggest that when there are no labor mobility barriers, then with flexible fishing operation costs, the optimal number of vessels and the fish stock would be smaller. Larger values of H (i.e., Herfindahl index) and greater differentials in the fishing efficiency index in the fishing community also result in relatively fewer vessels and fish stock. Finally, as to the impacts of changing fish stock growth rate and fish price on the optimal vessel number and fish stock are also discussed.
