After that the food market has changed radically. At the same time the eating away from home has become increasingly common. The aim of this paper is to describe the development of fish consumption in the Finnish catering service sector. The focus is to evaluate the period during rapid market changes. The estimation of fish consumption was based on a statistical sample and the data was collected in 1988, 1991, 1994 and 2005. It was found that the fish consumption has increased 30 per cent during the last ten years. The growth is exclusively based on imported fish. All types of imported fish products were used for meals more than earlier, but the consumption of fresh fish products has grown most extensively. The consumption of salmon and salmon trout increased most, while domestic caught Baltic herring is considerably less important than earlier. The frequency of serving fish meals has also increased. The abolition of national trade restrictions on fresh fish has inevitably had an impact on the consumption of fish in the catering sector. The data was collected in 2005 with telephone survey in interviewing persons, which were involved in managing or procuring operations in the outlets. The results showed that the fish consumption per served portion varies considerably between different outlet types. The consumption was two times higher in restaurants or hotels than in schools or hospitals. Moreover restaurants purchased most of fish as fresh whereas public kitchens preferred frozen products. Staff’s opinions concerning fish price or origin had impact on the fish consumption. However opinions about healthy aspects or the risk of environmental pollutants did not have impact of fish consumption in catering outlets. The outlook of the entire production chain needs to be clarified to enable producers to react to new consumer demands. The general idea in this study was to analyse consumers' and producers' opinions regarding fish products and the production environment simultaneously. Items measured were future threats and opportunities in the fisheries sector and fish consumption habits. A pilot survey was conducted in 1999. Collection of countrywide data was started at February 2000, when the sample size was expanded to include 2000 consumers and 350 enterprises. Data were collected with computer-based phone interviews. The results on enterprises are divided into fishing, aquaculture, processing, wholesale and retail trade. In this study the sample of consumers are approached as a whole. Both fisheries enterprises and consumers outlooks towards Finnish fisheries were rather confident. The outlooks for essential threats and opportunities inside the fisheries sector were quite unanimous. The reliability of the results is discussed. A trend-and-confidence indicator describing the overall economic trend and expectations of enterprises was calculated from the means of balance figures of questions concerning change in financial standing, turnover and investments of an enterprise. The results can be divided into fishing, aquaculture, processing, wholesale and retail trade, i.e. to the whole production-processing-commerce chain. In February 2000, the confidence towards coming 12 months in the Finnish fishery enterprises was encouraged. The only sector that had deteriorated during the past year was fishing, however the outlook of fishing for the coming year was more promising. The results are based on a sample of about 300 enterprises representing a survey population of about 1070 fishery enterprises. The reliability of the results is discussed.
